Give Your Apple a Makeover With These Recipes

I don’t know anything more diet-friendly than a shiny red (or green…or yellow) apple.  There’s something refreshing about biting into an apple straight from the market, but some of us tire from the thought of eating one every day. I’ve scoured the web and narrowed down three of the most delectable and healthy apple-eating options! Here are some ways to incorporate the sweet, crisp fruit into other daily meals:

1. Apples n’ Meat

Don’t limit your apple influence to desert foods. Pairing apples with your usual meat dinner will offset the more salty, rich flavors. I’ve found this great recipe for a chicken and apple sauté, under 300 calories. 

2. Apples n’ Salad

If your usual salad is getting boring, try adding chopped slices of apple and red onions. With bits of chicken and vinaigrette, this makes for a crunchy and hearty salad. A great homemade dressing with apple cider, olive oil, honey, a bit of mustard powder, salt and pepper goes great with a green salad with pecans.

3. Apples n’ Eggs

At first glance I thought the two had no obvious palate relationship, but the recipe for Carmelized Apple Omelets is so popular online that I had to test it myself. Try it for your next breakfast and thank me later!

Caramelized Apple Omelet (serves 2)
2 TB butter
2 tsp sugar
1 apple, peeled, cored, and cut into slices
3 eggs
2 TB sour cream
2 TB dulce de leche
2 TB goats cheese

  • Melt butter in a skillet over medium heat. Add sugar and cook stirring until dissolved. Add apple and cook turning the slices once until golden and tender.
  • Whisk together the eggs with a pinch of sea salt. Add the eggs to the apples in the skillet and cook over a medium-low heat, lifting the edges of the omelet so the raw egg can flow below. Cook about two minutes until the omelet is set on top but still most. Dollop the sour cream. Add goat’s cheese and dulce de leche across the center of the omelet.
  • Fold the bottom third of the omelet over the filling and holding the skillet over a plate carefully slide the omelet out and fold the last third over the filling. Cut in half and divide between 2 plates.
