Healthy Recipes: Two Healthy Cheese Recipes

We all want to eat healthy and lose weight; the hard part is actually doing it. Throughout my own weight loss journey, no matter what weight loss plan I was on, I found that preparing my food ahead of time made me think about what I was going to eat before I actually ate it. It's one of the best ways to watch what you're eating and stay within your diet and weight loss goals.

To help you do the same, every couple of days I will be posting healthy snack and meal recipes which will hopefully give you some nutritious AND yummy ideas. If you have any recipes you would like to share, please feel free to leave them in the comments section, I love trying out new recipes!

To start off our recipe series I decided to show you two recipes that include one of my favorite ingredients, cheese! 

Healthy Snack: Cheese Melt

  1. Spread ½ teaspoon of spicy mustard on a cocktail-size slice of thick whole-grain rye bread.
  2. Add a thin square of sharp cheddar (about the same size as the bread) and broil until the cheese melts.
  3. Top with a slice of tomato and a sprinkling of caraway seeds.

This tasty snack really hits the spot and leaves you feeling satisfied.  It has the added health bonus of being rich in calcium too.

Healthy Meal: Cheesy-Good Chicken Quesadillas

I love Mexican food but being on a weight loss program, I try not to eat it very much because of its traditionally high fat content.  This simple quesadilla recipe is a low cal alternative to the real thing, and it tastes great!  Don’t believe me?  Go ahead and try it out!

Ingredients:

1 La Tortilla Factory Low Carb, Low Fat Whole Wheat Tortilla (small size)

1/4 cup shredded fat free cheddar cheese (or fat-free mozzarella, fatfree american, fat-free jack)

2 oz. chicken breast, grilled and sliced

1 Tbsp. green onion, diced

1 Tbsp. salsa

1 tsp. light sour cream

Directions:

In a pan lightly spritzed with nonstick cooking spray, set down your tortilla. Spread the cheese, chicken and green onion evenly on top. Let set (cheese will just be beginning to melt), then fold over. Cook on medium heat for a minute or so, flipping quesadilla halfway in between. Slide your quesadilla onto a plate and serve with the salsa and sour cream. Enjoy!
